Cam Davies is a seasoned hospitality professional with over 20 years of experience in the industry, currently at the helm of The Fat Duck in Te Anau, New Zealand, together with his wife Selina. Cam’s passion for hospitality began in high school, where he started washing dishes at his local pub and quickly found inspiration from the chefs around him. After completing training at Polytech, he gained invaluable experience at renowned establishments such as the Crowne Plaza in Christchurch.

Cam’s career took him across the globe, working in the yachting industry and spending several years in London—experiences that honed his skills in both kitchen management and leadership. It was during his time on yachts that he met Selena, and together they returned to New Zealand in 2016, taking over The Fat Duck alongside welcoming their first child.

Since settling in Te Anau, Cam has demonstrated a commitment to not only delivering top-tier hospitality but also building a financially sound and people-centered business. Through his journey with The Hospitality Company’s coaching program, he has transformed his approach to financial management, team engagement, and HR best practices—successfully implementing open-book management, robust onboarding systems, and performance incentive programs.

Cam’s dedication to continuous improvement, staff development, and creating a rewarding workplace culture has made The Fat Duck a shining example of best practice in New Zealand hospitality. His leadership, honesty, and willingness to learn stand out, making him a respected figure in the industry and an inspiration to other hospitality business owners aiming for operational excellence and sustainable growth.
